Exciting times ahead for The Fat Fish as we welcome Antoinette Meyer to the team as Group Executive Chef. Antoinette will be heading up both our Fat Fish kitchens and other exciting projects, as mentor and guide, creative guru and all round quality control fanatic!
Having had the pleasure and privilege of working for some incredible chefs in the US and UK, some of which carried that all important star with an M, Antoinette found her way to Plettenberg Bay and wasted no time in working as Head Chef for some of our very best 5 star establishments, including Hunter’s, Tsala and Zinzi’s. This was followed by a move to The Plettenberg, part of the Liz McGrath Collection, as Head Chef, where Antoinette had the good fortune to work alongside another all round culinary genius, Chef Peter Templehoff, of “The Greenhouse” fame.
As part of our meet and greet we fired a few questions at Antoinette –
Favourite ingredient’s to work with? Maldon salt, miso paste and whatever I can pick and harvest myself.
Favourite comfort food? My dad’s waterblommetjie bredie.
What food trends would you like to see disappear? Smears on a plate… enough already!
Your top winter tipple? A good whiskey or Simon’s Buchu brandy..wow!
Who does the cooking at home? The hubbie…
What item should no kitchen ever be without? I can’t function without a good hand blender and a sharp knife.
Your ideal kitchen? All equipment in a good working condition.
Favourite fish? Trout – just as nice and oily as Norwegian salmon but way more affordable. And it’s local!
One thing every visitor to Plett should do? Experience sundown on the Keurbooms River with a good G&T in hand…oh and find a pansy shell!
